The Un.AB, Unione Assaggiatori Balsamico (Union of Aromatic Tasters), has the purpose of training expert tasters of ABM (Modena Aromatic Vinegar) who can carry out organoleptic and identification tests on the product in an objective way on the particular characteristics and together, providing a precise qualitative assessment on the same.
Some of the most important distinctive specifications of ABM are: transparency (clear and bright), density, colour, olfactory intensity, and a scent of wood, maturity, fruity aromas, as well as the wholesomeness; the objective assessment of the same lets you recognise the different qualities.

The Unione Assaggiatori Balsamico
collaborates with Companies in the Consorzio, to assess and certify their products. For the same actions the Un.AB can also collaborate with Producers outside the Consortium.
To promote the culture and experience of aromatic vinegar, the Un.AB holds conventions to introduce the product to others, specialised tasting workshops and courses for training tasters, for operators, consumers and lovers of the product who are interested in acquiring sensory instruments of analysis.
